This doesn’t look very tasty, but it is quite yummy and a quick easy delicious meal.

  • 1 cup diced red, green or yellow bell pepper
  • 1 tsp. sea salt
  • 4 tsp. Italian seasoning (oregano, basil, rosemary, thyme, sage, marjoram)
  • 2 tsp. garlic powder
  • 1 cup water
  • 4 cans diced tomatoes or 6 cups diced fresh tomatoes
  • 3 T sugar
  • 1/2 – 3/4 cup whole wheat flour
  • 1/2 cup milk or nut milk
ADD onions, pepper, salt, seasonings and water to a saute pan.
COOK for 5 minutes.
ADD tomatoes and sweetener and bring to boil.
BLEND mixture in blender, leave some UN-blended, if you prefer a chunkier sauce.
WHISK the flour with the milk in a small bowl until smooth.
ADD flour and milk to the mixture and cook, stirring until thick.
Serve over cornbread, potatoes, or biscuits.
Great served with a green salad.
