Have you ever tried roasting your veggies?

I am fairly new at this method of cooking vegetables and I love it!  It is so simple.  There are very few ingredients, and it just seems to bring out such a good flavor in whatever you are cooking.  You will have to try roasted brussel sprouts as well.  YUM, YUM!
Here is a recipe for roasted asparagus that my family enjoys and I hope you will too.
 
Roasted Asparagus and Other Veggies

Cook Time: 10 minutes

Ingredients (4-6 servings)
  • 1 1/2 lb. fresh asparagus, trimmed
  • Other veggies of your choice: red or green peppers, chopped onion, garlic cloves
  • Dried Italian seasoning or a combination of thyme, oregano, or rosemary. (fresh or dried)
  • salt and freshly ground pepper
  • Parmesan cheese (optional)
  • 2 TBS Olive oil
Instructions
  • Preheat your oven to 450 degrees F. 
  • Heat a heavy shallow baking pan in the oven for 5 minutes.
  • Meanwhile, in a large bowl toss asparagus with herbs, oil and salt and pepper.
  • Spread asparagus and other veggies in a single layer. Return to oven.
  • Roast uncovered until spears are tender when pierced with the tip of a knife, about 10-12 minutes. Turn a few times to coat with oil and evenly roast.
  • Remove baking pan from oven. Using tongs, transfer vegetables to serving platter.
  • Sprinkle with Parmesan cheese. (optional)

Black Bean Enchiladas

Ingredients (6-8 servings)
  • 2 cans La Victoria Enchilada Sauce (10 oz.)
  • 12-115 White Corn Tortillas
  • 2 cups cooked or canned black or pinto beans
  • 1 cup Corn, fresh or frozen
  • 1 cup Zucchini, minced
  • 3 Garlic cloves, minced
  • 1 cup Tomato, chopped finely, or 1 can diced
  • 1 Bell Pepper, chopped (optional)
  • Shredded Cheese (optional, you don’t really need it)
  • Top with a dollop of
  • Guacamole and chopped black olives.

Simple ingredients!  If you have the time, you could cook your own beans.  This is a great option for a food storage meal!

Mix all the filling ingredients and 1/2 of the enchilada sauce, reserving some to pour over the top.

 In a 9 x 13 casserole dish, moisten the bottom with enchilada sauce. Layer the corn tortillas, then 1/3 of the filling. Repeat for a total of three layers, end with corn tortillas.

 Drizzle the remaining enchilada sauce over the top.

Top with shredded cheese, (optional).
Bake 350 degrees for 30 minutes.
Serve on a bed of greens and enjoy!
