What is a German pancake?

A German pancake, also known as “Pfannkuchen” or “Eierkuchen,” are a delightful twist on the classic breakfast favorite.

Originating from the heart of Germany, these pancakes boast a unique texture and flavor profile that sets them apart from the typical breakfast pancake.

My son and daughter-in-law introduced me to them, as they make them for breakfast several times a week.

All these years without even trying them, I’ve now become a big fan!

This German pancake recipe makes a 9×13-inch baking dish size.

You can split the mixed batter into two small square baking dishes and serve them individually.

German pancakes are great for breakfast, brunch and even for a yummy and different dessert.

German Pancake Ingredients:

  • 1 cup all-purpose flour or (I like using oat flour)
  • 6 large eggs
  • 1 cup milk
  • 5 TB butter
  • ½ tsp. salt
  • 1 Teaspoon vanilla extract

German pancake oat flour

Instructions:

  • Preheat your oven to 425°F (220°C).
  • Place a 9×13-inch baking dish in the oven as it heats up.
In a mixing bowl, whisk together the eggs, flour, milk, and a pinch of salt.
  • Don’t overthink it—just mix until it’s a smooth, lump-free batter. (You can even use a blender which makes it really simple).
  • Melt the butter in the baking dish in the preheated oven.
  • Once it’s sizzling, pour in the batter. The sizzle is the secret to that irresistible golden crust.
  • Pop the baking dish back into the oven and let the pancake bake for about 20 minutes.

Keep an eye on it; Watch the magic happen as this German pancake puffs up and turns a gorgeous golden brown.

Take it out of the oven, marvel at your creation, and then serve it up however you like.
