Wondering what to fix for lunch or dinner? Here is a recipe for a yummy BBQ chicken sandwich. You may be thinking, “that will take forever” if you have to cook the chicken first. Well, I am going to share with you some tricks on how to make it a quick process using a pressure cooker or canned chicken. I prefer to cook my own chicken, but if you are in a pinch and pressed for time, canned chicken will work.
If you are not familiar with or have not used a pressure cooker, do not fear. (The memory of my mother telling me of her experience of one exploding in her kitchen kept me from using a pressure cooker). But I have learned since that pressure cookers now are much more safe. I have been using one fore several years now and love it. However, I was just using it for mostly steaming vegetables. I hand’t used it much for cooking meat. I was using a slow cooker to cook my meat, and it didn’t do a very good job and cooked too high for bone broth.
So for the last year I had been contemplating buying a new slow cooker. After researching slow cookers I was still confused at what I should do. Then I came across this bad boy, the Instant Pot 7-in-1 Multi-Functional Cooker–Pressure Cooker, Slow Cooker, Rice Cooker, Saute/Browning, Yogurt Maker, Steamer & Warmer. I am so in love with this thing! Yes, I bought it. After reading the reviews and several blogs about it, I knew that this is what I needed. Now I can get rid of my slow cooker and rice cooker.
I have been whipping up yummy moist roasts, chicken dinners, perfect rice, veggie dishes, refried beans, and shredded chicken. The shredded chicken is what I want to share with you today. In this post from My Heart Beets, this gal shares how easy it is to make shredded chicken using the Instant Pot. I like the recipe, the only thing I would change is to add 1 cup water instead of 1/2 cup to about 6 chicken breasts.
I cook up a batch and shred it. Let it cool and then I put it in zip bags for other meals or snacks.
So yesterday I was contemplating what I could fix my husband and I for lunch. I wanted something healthy, not fast food and I didn’t have much time. I remembered that I had cooked up a batch of shredded chicken the other day in my instant pot and had it in the refrigerator. I also remembered that I had frozen some homemade BBQ sauce. So I was able to throw these sandwiches together in no time at all.
- Shredded chicken
- BBQ Sauce
- Provolone Cheese
- Horsey Sauce (optional) 2 Tablespoons Mayo, 2 teaspoons horseradish
Put it all together, add a fresh green salad, a few chips and you are good to go. A yummy complete meal in no time at all.
